Mole Poblano serves 4-6
8 ounces of Mole Paste (Dona Maria brand)
1 each Chile Ancho toasted and seeded
1 each Chile Pasilla toasted and seeded
2 each slices of White Bread toasted
3 ounces of Dark Unsweetened Chocolate (Abuelita brand)
2 ounces of ripe Platano Macho (Ripe Plantain)
2 ounces of Dark Brown Sugar (if you would prefer a sweeter Mole add more)
1/2 teaspoon Ground Cloves
1/2 teaspoon Salt
2 ounces of Roasted Peanuts or 1 teaspoon of Peanut Butter
1 quart of Chicken Broth
Soak all of the above ingredients for 2-3 hours in the chicken broth. Blend all of the ingredients adding them in slowly so they mix well and have a gravy like consistency. Transfer to a sauce pan and simmer slowly (add more broth if the Mole consistency is too thick). Mole Poblano is traditionally served with chicken however pork and turkey make great alternatives.
